It ended being one of the tastiest baked chicken wing recipes I created by not sticking to the plan and FINALLY using my heavy handedness for greatness!!
Whether baked or fried, chicken wings are one of those inexpensive, loved by many, go-to dishes to make for parties and get-togethers. And this past Saturday it served as ‘most popular’ appetizer amongst a bunch of strange faces at my friend’s dinner party. The dinner party served as two celebrations: a party for fifteen of us to celebrate his husband’s thirty-something birthday and it was a long awaited cheat day for me. Yes, I gotta make it about myself–LOL.
There was no theme to the dinner party though Italian inspired food was on the menu. I kinda rocked with that in mind as I walked through the fresh produce aisle of the grocery store for inspiration. In trying to stay away from the sweet, spicy and saucy – you know the usual adjectives used to describe wings, I ended up creating my recipe. One that made me less guilty to indulge. Ha, and I don’t have a name for this Italian /Caribbean-esque recipe that can work for baked and fried wings. Trust me, just make it everyone will be happy.
– For the party, I bought two packs of whole wings then cut in two. Giving me 56 pieces and I used two baking sheets to bake the wings in the oven.

– As mentioned above, this recipe can is great for fried and baked chicken wings. Once the chicken wings are fried and cooked completely, toss the wings in as much or little dressing as desire.
Prepare (clean and wash) the wings, season with salt, black pepper, grated garlic and cumin. Season no less than one hour before baking.
Italian /Caribbean-esque dressing
Using a food processor, chop 6 cloves of garlic, 7 basil leaves, 5 sprigs of thyme and a handful of parsley leaves, no stems. Empty the contents in a mixing bowl and add 1 tsp lemon zest, 1 tsp of white pepper, 1 tsp of salt, ½ Tbsp. of pepper flakes, ½ cups of olive oil and the juice of ½ and orange.
Preheat the oven to 375 degrees F
Place the seasoned chicken wings in a baking sheet and bake for 30 minutes before liberally brushing with the dressing. Bake for another 15 minutes before brushing on the rest of the dressing and cook for 15 minutes until crispy and golden brown. Serve hot.
